Foolproof Tomato Basil Soup

I feel part of adulating is mastering key recipes that can be your go to in a rush. I mean there is nothing in the world better than a home cooked meal.

So without a further a do I will share with you a fail safe simple and easy recipe for Tomato and Basil Soup.

Ingredients:

  • 2 medium onions
  • 4 garlic cloves
  • 6 organic tomatoes
  • 1 tin of organic chopped tomato
  • A big handful of fresh Basil
  • Half a teaspoon of Thyme
  • 1 teaspoon of brown Sugar
  • Salt as required to individual taste
  • Olive Oil

Recipe:

Preheat your oven at 160 degrees.

First you need to cut your tomatoes in half and place them on a lined baking tray. Cover the tomatoes with a good dose of olive oil and some salt. Pop this in to the oven on 160 degrees for 40 mins.

On a separate baking tray place sliced onions and garlic tossed with olive oil and a little salt on the second shelf of the oven below the tomatoes at the same temperature.

Keep an eye on this as this will cook quicker than the tomatoes. Once you see them go brown remove and place both onions and garlic (minus the skin) in a blender.

Once you have a slightly chunky consistency place the onions and garlic in a deep saucepan with a little olive oil. Take your tin of chopped tomatoes and empty into the pan. Cook everything on medium heat. Add sugar and thyme, once you see the tomatoes breaking down add your handful of basil, at this point you also want to lower the heat.

Take your now roasted tomatoes from the oven and place inside the saucepan. Gently mix everything together and leave to simmer.

You will want to cook this for at least 10/15 min depending on how you prefer your soup consistency. After which take your handheld blender and combine everything together.

Serve with bread or on its own for a warm, hearty and comforting dinner.
